Tea lessons are back in session and that means... new tea sweets! Wagashi tend to be layered during fall and winter, just as the people that enjoy them would wear extra layers to ward off the chill of the colder months.
This week's sweet is called Joyo Manju and is a shin (formal) wagashi. The outer layer is made with joyo (yam) flour and the center is filled with sweet bean paste. The flavor is both savory and sweet.
