Tea Review: Ying Ming Yunnan China Black Tea (Metropolitan Tea Co)

Ying Ming Yunnan China Black Tea
Metropolitan Tea Company
Type: Black
Origin: China, Yunnan Province
Product Description:  Excellent fullness and subtle China sweetness. Only produced during March and April when the mountain air is moist and cool.

Temperature: 208° F
Amount: 3 grams
Steeping Time: 3 minutes

The dry leaves have an aroma of brown sugar and sweet hay.

The infusion is red with a sweet aroma of honey and dates.  I also picked up a hint of something fruity like apricots.  The flavor reminds me of burnt sugar and walnuts with a dry finish.

I was quite impressed with the sweet, heady aroma of the dry and infused leaves and the finish was mouthwatering.

Tasting suggestion:  I was inspired by the aroma and enjoyed a  cup of this tea with a handful of chopped dates with delicious results.

This was tea was provided as part of a workshop.
