Tea Review: Organic Jin Yu Tie Guan Yin (New Century Tea Gallery)

The dry leaf has a salty marine aroma, reminding me of nori and cooked spinach.

The golden green infusion has a fresh green aroma with floral notes and a sweet green, toasty flavor.

I initially brewed this tea for 3 minutes and found the flavor and aroma far too light for what I would expect from an oolong.  A second attempt at 4 minutes greatly improved the results.  I loved the first cup, but enjoyed the second most of all.  There were more nuances and a bold green flavor that reminded me of sencha.  Interestingly, the floral notes were lacking and the green aroma and flavor stood out in the second cup, while the third cup had strong floral notes.  This tea really evolves between steepings.   I reduced the steeping time after the first cup, but I would recommend steeping it around 3-4 minutes (or more) for a bolder flavor after the second cup.
