Tea Review: Genmaicha

Genmaicha

Steeping Time: 2 minutes

The dry leaves have an aroma of popcorn and fresh cut grass.

The infusion is pale jade and gold with an aroma of freshly popped corn, roasted nuts and rice, and faint hints of grass.  The taste is like roasted nuts and popcorn with a faint green finish.

I generally steep genmaicha at 2 minutes, but this version would do well at 3-4 minutes.  It was perfectly toasty with no astringency at this temperature.  On a separate occasion, I steeped it at 185° F and the green astringency in the tea really took over.  This would pair very well with fish with a strong flavor as well as chocolate.
