Tea Review: Jun Shan Yellow Brick (Phoenix Tea)

Steeping Time: 3 minutes

The dry leaves have an aroma of dates, honey, and flour.

The golden amber liquor has a nutty, sweet floral aroma with a taste that is smooth, velvety, and lightly floral.

This tea produced three satisfying infusions when prepared at 175° F.  I found that, with a slightly higher temperature, the tea tends toward a green sencha-style flavor, still with the low astringency that is a signature of yellow teas.  Perhaps because I was recently thinking about a local crumpet shop, the dry leaves reminded me of a warm crumpet drizzled with honey.
