Tea Review: Shinko (The Jasmine Pearl)

Type:  Green
Origin:  Japan, Shizuoka Prefecture
Product Description:  This lightly roasted sencha blend’s name means ‘deep roast aroma.’ Shinko’s fresh nutty body and salty sweet undertones taste of toasted oat and fresh cut wheat, in a perfectly baked pastry crust. Try iced.

Temperature: 175° F
Amount: 3 grams
Steeping Time: 3 minutes

The dry leaves have an aroma of nuts, cocoa, maple syrup, and lightly salty nori.

The golden infusion has a salty savory aroma with notes that remind me of baked butter cookies and hot edamame.  The taste is roasted green with notes of buttery macadamia nuts and savory umami.

This tea produced three full-flavored infusions and would likely go further.  At 3 minutes, it had a mild astringency and I believe a slightly shorter steeping time would produced even better results.
