Tea Review: Lightly Roasted Dong Ding (Eco-Cha)

Temperature: 185° F
Amount: 3 grams
Steeping Time: 3 minutes

The dry leaves have an aroma of roasted almonds, mixed grains, and a hint of cocoa and pepper.

The infusion is pale green-yellow with a nutty, savory, sweet green aroma.  The taste is smooth and toasty with a nutty flavor similar to macadamia nuts and a long velvety finish.

This oolong was from the inaugural harvest of Mr. Lin's organic tea farm in Lugu, Taiwan.  It was provided as one of the perks for supporting Eco-Cha's Promote Sustainability - Get Great Tea fundraiser.  Throughout three steepings at 185° F, the tea provided a wonderful savory, nutty and almost buttery taste with a bit more complexity coming out after each infusion.  Since the leaves hadn't fully opened after the third infusion, I continued to taste the tea, steeping at 202° F for only one minute.  The results were slightly more floral and sweet and also quite delicious.  I stopped at five infusions and all signs suggest that it would  be good for more.
