Tea Review: Sayama Sencha Kakurei (Yunomi/Morita Tea Garden)

Origin: Japan, Saitama Prefecture
Product Description:  Spring first flush harvest of 10th generation tea farmer Fujiichi Morita's Sayama Sencha, Kakurei.

Temperature: 140° F
Amount: 3 grams
Steeping Time: 1 minute

The dry leaves have a spicy aroma of fragrant wood and minty menthol.

The infusion is pale green with an aroma of buttery macadamia nuts and green grass.  The taste is smooth with notes of cooked edamame and fresh salad greens.

The first infusion was light and smooth, almost delicate, and I was tempted to try it at a higher temperature.  No need!  The second and third infusions were bright green, thick and opaque with a sharp green aroma and mild astringency that I look for in a great sencha.
