Tea Review: Yip-cha (Phoenix Tea)

Origin:  Korea
Product Description:  This Yip-cha is a lovely, forgiving Korean green tea with lots of seaweedy, grassy notes and splendid mouthfeel. It comes from the same semi-wild organic plants as our Dong Cheon teas (Daejak, Jungjak, Saejak). It is a favorite everyday tea in the Insadong neighborhood of Seoul.

Temperature: 175° F
Amount: 3 grams
Steeping Time: 2 minutes

The dry leaves have an aroma that is marine green with heady notes of almond butter, sesame seeds, and seasoned wood.

The bright yellow-green infusion has a rich aroma of buttery nuts.  The taste is smooth, savory, and nutty with a hint of green and a clean finish.

This is a very pleasant and forgiving tea.  Throughout three steepings, the flavor changed slightly, the color brightened, and only a hint of green grassy astringency came through.
