Tea Review: Wu Liang Gao Shan (Phoenix Tea)

Steeping Time: 3 minutes

The dry leaf aroma is grassy green and savory with notes of sweet oats.

The infusion is pale yellow-green with an aroma of butter, nuts, cooked soybeans (edamame), and a hint of green vegetable.  The taste is smooth, savory, and buttery with a hint of green vine and a long savory finish.

As the leaves opened up, the liquor became slightly darker while the flavor became slightly lighter.  Delicious savory notes carried throughout three infusions and with a slight increase in water temperature, I would expect good results from a few additional steepings.
