Tea Review: Organic Meiryoku Sencha (Charaku)

Origin: Japan, Kagoshima Prefecture, Kirishima
Product Description: This Organic Sencha from Kirishima infuses to a nice green hue, with a slight woodsy aroma. It is a smooth tea with good mouthfeel. It has the characteristic grassy taste and medium-level astringency characteristic of fine sencha.

Temperature: 165-175° F
Amount: 3 grams
Steeping Time: 1.5-2 minutes

The dry leaves have a sweet mineral and marine (nori) green aroma.

The bright green infusion has a rich and savory aroma with buttery, mineral, and edamame (soybean) notes.  The taste is sweet, savory, and thick with nutty and buttery notes and a sweet green finish.

Steeping this shincha for 1.5 minutes at approximately 165° F produced very little astringency and steeping at the same temperature for 2 minutes or at 175° F for 1-1.5 minutes brings out a mild astringency that doesn't overwhelm the flavor and aroma.  While I tend to favor umami over astringency, in this case the astringency gave the tea a summer-like impression.  It's worth experimenting with time and temperature to find the flavor profile you prefer.
