Recipe: Coconut Matcha Popsicles

In an attempt to cool down during our record breaking high temperatures, I made Coconut Matcha Popsicles.  While I can't share this sweet delicious summer treat with you in person, I can share the recipe.

Coconut Matcha Popsicles

1 13.5 ounce can coconut milk
2-3 teaspoons matcha powder
¼ cup organic honey

Pour the coconut milk into a large measuring cup or pourable bowl and mix until smooth.
Pour approximately ¼ cup of coconut milk into another smaller bowl.
Add matcha powder and whisk until the color is even. 
Pour the mixture back into the bowl of coconut milk, add honey, and  mix until the texture and color are even. 
Pour into popsicle molds and freeze for 5+ hours.  

Makes 4-6 popsicles.

Vegan Option:  Replace honey with ¼ cup agave nectar or ¼ teaspoon stevia.
