Tea Review: Roasted Dong Ding (Rooted Rooms)

We love this tea. Dong Ding oolong is one of the most famous oolong teas in Taiwan. The name Dong Ding means Frozen Summit, is where the tea is grown and handpicked. After being skillfully roasted, the leaves produce a rich and deep-amber colored liquid.

The tea is balanced, smooth, and salivating with an incredible ripened fruity aroma and rich toasty notes of chocolate. This is a good tea to drink now or age in an airtight ceramic jar for your future self.
Temperature: 190° F
Amount: 3 grams
Steeping Time: 4 minutes

The dry leaves have an aroma of rich dark brown bread and cocoa, roasty with a hint of smoke.

The golden infusion has a rich and roasty aroma of dark bread and cocoa with a hint of  fruit and an equally dark, rich, and roasty taste.  

The flavor remained delightfully rich and roasty throughout three infusions with several more good infusions to look forward to.  I was pleasantly surprised by the light buttery notes that developed in the third infusion.  While I was more than satisfied with the results when steeped at 190° F, this will certainly perform nicely at higher temperatures.
