Tea Review: 2008 Lanz White Tea Cake (Phoenix Tea)

The dry leaves have an aroma of fragrant wood and pepper.

The amber liquor has a sweet aroma with notes of fruit, honey, and sweet pea flower.  The taste is sweet with light notes of fruit and honey, as well as slightly savory rice-like notes and a long honey-sweet finish.  

This is the second time I've broken into this cake and it does seem to have developed a bolder aroma and flavor over the past couple years.  I was somewhat reminded of honey-glazed baked pears.  The results while prepared using a cupping set with a base 3 grams of leaf were very nice throughout three infusions.  Preparing gongfu-style with a small brewing vessel and more leaf will increase the number of flavorful infusions.  Phoenix Tea had a limited number of these cakes available which I believe are currently sold out.
