Tea Review: Peony White Needle (Metropolitan Tea Company)

Product Description:  This delicate white tea has a clean taste faintly reminiscent of fresh apples. Refreshing with a lovely, lingering flavor. The ideal is a leaf or two being wrapped around a newly developing shoot. These shoots are plucked and segregated from the rest of the leaf being plucked. These leaves are then naturally withered and the painstaking process manual sorting to select the long ‘furry’ white tip occurs.

Temperature: 175° F
Amount: 3 grams
Steeping Time: 3 minutes

The dry leaves have an aroma of warm hay, dry wood, and pepper.

The liquor is pale yellow with a spicy, peppery aroma and a light, savory, peppery-green taste.

After the first infusion, I found that the flavor became just a little stronger while still remaining light and smooth and the tea was enjoyable through three infusions without loss of character.  I would like to try this again at a higher temperature (180-185° F) and shorter steeping times as I believe it may bring out more flavor and a stronger aroma without becoming astringent.
