Coyle's Bakeshop

Coyle's Bakeshop, located in Seattle's Greenwood neighborhood on the corner of Greenwood Avenue North and NW 83rd Street, first opened its doors in March 2015.  Owned by pastry chef and culinary instructor Rachael Coyle, the bakeshop offers after-hours events including cooking classes and afternoon teas like the one I attended on August 12th. 


The space is filled with natural and interior light.  Indoor seating is at tables and at window counters with additional outdoor seating available when weather permits.



Coyle's Bakeshop specializes, as you might guess, in pastries, cakes, and other baked goods.   They also offer a lunch menu with sandwiches, salads, and soups.


In addition to baked goods, loose leaf teas, house-made jellies, and marmalades are available for purchase.


Coyle's Bakeshop offers a selection of black, green, and herbal teas, as well as drip coffee and espresso.  All teas are sourced from local tea shop B. Fuller's Mortar & Pestle and are served in single or two-person teapots.   

Since we arrived early during regular business hours, I took time to enjoy a single-serve pot of Mint Blend.  Tea is presented with a timer, which was a nice touch for those of us who can get a little distracted while chatting.


We left for a walk around the neighborhood when the bakeshop closed and returned after setup for the afternoon tea was complete.  Since the weather was warm and the building doesn't have air conditioning, every guest was provided with a lovely wood fan.  The afternoon tea doubles as a tasting session, with each course introducing items that may appear on the menu in future.


The Savory Course featured Genmaicha from B. Fuller's Mortar & Pestle paired with a cucumber and radish salad, boiled egg with herbed mayonnaise and parmesan crisp, and a savory "shortcake" with cherry tomatoes, basil, and ricotta.


The Pastry Course featured Pettiagalla Estate Golden Ceylon from Perennial Tea Room paired with currant scones served with gooseberry jam and brioche toast with thyme and nectarine jam.




The Desserts Course featured Bai Hao Oolong from B. Fuller's Mortar & Pestle paired with a Santa Rosa plum and almond tart with crème anglaise, a lavender, lemon and blueberry macaron, and a summer pavlova with marionberry sorbet, fresh cream, blackberries, and peaches.





Reservations are required and seats do fill up quickly.  Note that every available seat will be used, so you may be seated with your party at a counter or at a table.

B. Fuller's Mortar and Pestle

B. Fuller's Mortar & Pestle is located in the heart of Seattle's Fremont neighborhood on 36th Street between Fremont Place North and Fremont Avenue North, and just steps from the Statue of Lenin.


The tea business was founded in 2009, becoming a fixture in local farmers markets as well as food and gift shows before opening a retail space in Fremont four years ago


Stepping into the small tea shop is like stepping into a 19th-century adventurer's parlor with Victorian decor and a Steampunk flair.   


The tea shop offers classic teas, herbal tisanes, botanical teas, infusers, bottled starter kits, bath teas, and tinctures.  The herbals and botanicals are made with local and organic ingredients.


Further into the parlor is a tea bar where freshly prepared tea is often available to sample.  The sample of French Earl Grey I tasted was very nice.


Fremont is a delightful neighborhood with something for everyone to enjoy.  Visit famous landmarks like the Fremont Troll, attend events like the Fremont Fair and Solstice Parade, take a tour at the Theo Chocolate factory, and dine in foodie paradise.  Plan your next visit and don't forget to include B. Tea Review: Sencha Saga (B. Fuller's Mortar & Pestle)

Type: Green
Origin: Japan, Shizuoka Prefecture
Product Description: A high grade Japanese tea from Shizuoka (Tranquil Hills) Prefecture. The dark, shiny leaves produce a strong, sweet, grassy flavor with a perfect balance of umami and nutty, rice notes

Temperature: 175° F
Amount: 3 grams
Steeping Time: 2 minutes

The dry leaves have a sharp green aroma with hints of seasoned wood and minerals.

The green-yellow infusion has an aroma of green grass, nuts, and minerals.  The taste is vine green and lightly savory.  

Short steeps provide the best results with an increase in astringency after the first steeping.

Tea Review: Yun Wu (B. Fuller's Mortar & Pestle)

Origin: China
Product Description: This Cloud Mist green tea is a tight curl, vibrant green leaf offering a light, citrus flavor, with a bright yellow liquor. A classic green tea, ours is 100% organic and 100% delicious.

Temperature: 185° F
Amount: 3 grams
Steeping Time: 2 minutes

The dry leaves have an aroma of grass, oats, and hay.

The infusion is light golden green with a lightly sweet, buttery, green, and floral aroma and flavor with a short velvety finish.

This tea produced several delicately flavored infusions.  I steeped the third infusion at 195° F which resulted in a darker liquor with the same sweet light taste.

Tea Review: Dragon Well (B. Fuller's Mortar & Pestle)

Type: Green
Origin: China, Zhejiang Province, Hangzhou
Product Description: The classic Dragon Well tea from Hangzhou, China, is a broad, flat leaf with a slight gloss. Our type creates a lovely sweet cup with a vegetal finish. Try steeping it for less than two minutes with water at approximately 190 degrees- you will be happy, and find you have time for a second cup.

Temperature: 185° F
Amount: 3 grams
Steeping Time: 2 minutes

The dry leaves have a nutty, green, toasty aroma.

The light golden green infusion has a sweet, toasty, slightly buttery aroma with notes of green vine and a tart, toasty, green vine taste.

A slightly shorter steeping time of 1.5 minutes brings out sweeter results.
