Tea Review: Tieguanyin with Bitter Melon (Phoenix Tea)

The dry leaves have a sweet and spicy aroma with notes of aged wood.

The orange amber infusion has a spicy and smoky aroma with notes that reminded me of baked yams and a hint of maple.  The taste is sweet and lightly tangy with notes of nut shells, melon, and a hint of smoke with a long finish.

While the best flavor is in the first steeping, a second infusion is worth exploring as it produced a darker liquor with smoky notes moving to the front.
